baking: banana & blueberry bread



Nothing beats a bit of home baking every once in a while; so when I found myself with some spare time and some overripe bananas earlier on today, I decided to get an apron on and get to work! I found a simple banana bread recipe online here and jazzed it up with a few added ingredients for a bit more flavour, and it has surprisingly turned out really well! 


// INGREDIENTS
  • 75g softened butter
  • 4 ripe, mashed bananas
  • 100g blueberries, frozen or fresh (I used frozen)
  • 200g soft brown sugar
  • 1 egg, beaten
  • 1 tablespoon vanilla extract
  • 1 teaspoon of cinnamon (or however much you like, according to your taste!)
  • 1 teaspoon of bicarbonate of soda
  • A pinch of salt
  • 170g plain flour (could probably use self-raising, too)
  • A drizzle of maple syrup (optional)


// METHOD
  • Preheat your oven to 180 degrees/gas mark 4/160 degrees if it's a fan oven. Grease your bread tin.
  • Pour the mashed bananas, butter, sugar, egg and vanilla extract into a large mixing bowl and mix.
  • Add the bicarb of soda, cinnamon and salt, then sift in the flour and fold in the blueberries last.
  • Pour the mix into the tin and bake for around 50 minutes. I would recommend checking it after about 40/45 mins, and putting tin foil over the top if it's already golden brown but not quite cooked all the way through. You don't want the top to burn! It should feel springy when it's cooked.
  • Remove and leave to cool on a wire rack. You can choose to drizzle with maple/golden syrup or honey whilst it's still warm for a little more flavour!


And it really is that simple. You can add things like walnuts and pecans and that kind of thing if you so wish; I bet a bit of white chocolate would also be a really nice addition!
